Main Meal Recipes > Moussaka
How to make Moussaka: This is a famous Greek dish. Quite labor intensive to make but once made is one pot cookery at its best. A good Moussaka makes an impressive meal for a dinner party.
Ingredients
3 tablespoons olive oil 2 cloves garlic, crushed 2 onions, peeled and chopped 2 cups minced lamb 8 fresh tomatoes, skins removed, chopped 3 tablespoons tomato puree 1 wineglass red wine 2 aubergines, sliced and sprinkled with salt 2 tablespoons grated cheese, strong cheddar or cheese of choice parsley to garnish salt and pepper 1 pint white sauce (see measure conversions for more information)
Method
- Cook the onions and the garlic in 1 tablespoon olive oil until soft. - Add the meat and cook for about 5 minutes. - Add the tomatoes, tomato puree and wine and cook for about 1 hour until thick and smooth. - Taste and season with salt and pepper. - Add more water if the mixture becomes dry. - Rinse the aubergine, pat, dry and fry in 2 tablespoons of oil until soft. - Take a deep casserole dish and fill with alternate layers of aubergine and meat sauce. - Pour the white sauce on top and sprinkle with cheese. - Cook at 180 degrees Centigrade (see temperature conversions) for about 45 minutes. - Serve garnished with finely chopped parsley.
